Bake Halloween pumpkin muffins ๐ŸŽƒ

Halloween is the last holiday before the festive countdown truly begins. This pumpkin muffin recipe makes a spooky seasonal treat and is the perfect way to use up pumpkins!

Pumpkin muffin recipe ๐ŸŽƒ

Quick and easy, these tasty muffins will take around 30 minutes to make and bake!

You will need:

  • 225g plain flour

  • 2tsp baking powder

  • 1tbsp ground cinnamon

  • 100g caster sugar

  • 50g soft light brown sugar

  • 200g pureed pumpkin (ahead of time, cut your pumpkin into quarters & roast for 35-40 minutes until the flesh is soft and peels away from the skin, add the flesh to a blender then pulse until smooth)

  • 2 large eggs

  • 125g melted butter

How to:

  • Preheat the oven to 180C fan and place muffin cases in your muffin tin

  • Mix the dry ingredients together, making sure any lumps of sugar are broken up

  • Beat the eggs and pumpkin puree together until combined

  • Add the melted butter and egg pumpkin mix to the dry ingredients, then mix together until everything is combined

  • Bake for 15 minutes until the muffins have risen and look golden

  • Once baked, place them on a wire rack to cool completely!

Add a cream cheese topping:

  • 100g butter

  • 100g icing sugar

  • 200g full fat cream cheese

Beat the softened butter until itโ€™s soft then add in the icing sugar until itโ€™s smooth and soft like buttercream. Slowly mix the cream cheese in with a wooden spoon and place in the fridge to firm up before spreading onto your muffins!

Dust with a sprinkling of cinnamon and enjoy!
