Pumpkin muffin recipe ๐
Quick and easy, these tasty muffins will take around 30 minutes to make and bake!
You will need:
225g plain flour
2tsp baking powder
1tbsp ground cinnamon
100g caster sugar
50g soft light brown sugar
200g pureed pumpkin (ahead of time, cut your pumpkin into quarters & roast for 35-40 minutes until the flesh is soft and peels away from the skin, add the flesh to a blender then pulse until smooth)
2 large eggs
125g melted butter
How to:
Preheat the oven to 180C fan and place muffin cases in your muffin tin
Mix the dry ingredients together, making sure any lumps of sugar are broken up
Beat the eggs and pumpkin puree together until combined
Add the melted butter and egg pumpkin mix to the dry ingredients, then mix together until everything is combined
Bake for 15 minutes until the muffins have risen and look golden
Once baked, place them on a wire rack to cool completely!
Add a cream cheese topping:
100g butter
100g icing sugar
200g full fat cream cheese
Beat the softened butter until itโs soft then add in the icing sugar until itโs smooth and soft like buttercream. Slowly mix the cream cheese in with a wooden spoon and place in the fridge to firm up before spreading onto your muffins!
Dust with a sprinkling of cinnamon and enjoy!
Of course, once youโve made your muffins, the perfect way to enjoy them is with a Halloween film night! Put your PJs on, make a hot chocolate (extra points for pumpkin spice or toffee apple flavour!) and get snug under a blanket! Itโs the perfect way to get into the Halloween spirit, without leaving the house.
For family friendly films, try Hotel Transylvania, Scooby-Doo, Wallace & Gromit: Curse of the Were-Rabbit, Tim Burtonโs Corpse Bride, and of course, not forgetting the classics - Hocus Pocus, The Addams Family, Ghostbusters or The Witches!
However youโre spending Halloween, we hope itโs spooktacular!
